Nadan Olan curry is a simple recipe and a classic vegetarian Kerala cuisine dish. It an important part of Onam sadya and it is easier to cook. Olan is a mild spiced and subtle-flavored dish cooked with white pumpkin or ash gourd and coconut milk. There are basically two types of Olan, based on color and spiciness. Here, I am showing you one of them which is spicier and more colorful. This nadan olan curry recipe is usually served with steamed rice.

This is a Thrissur style Olan preparation. Do definitely give it a try and give us your feedback.
Clean the pumpkin, shallots, ginger, green chilli and curry leaves. Then thinly slice them and keep aside.
Next take a pan, preferably an earthen vessel and add all the ingredients listed under *Main Ingredients except for the coconut milk.
Mix thoroughly with your hands and keep it on the stove.
Now add two cups of thin coconut milk to the above and mix well. Cook the pumpkin in medium flame till the pumpkin is cooked well.
Finally add one cup of thick coconut milk and just bring it to boil. Switch off the flame and cover it.
Heat one table spoon of coconut oil in a pan and add 3-4 thinly sliced shallots and fry them. When they turn crisp add this to the curry and close it with a lid. Allow it to rest for half an hour for the flavors to set in.
Your simple and humble Thrissur style Nadan Olan is ready to be served. Have it hot and steaming rice along with Kerala fish fry. :)
Conclusion
Instead of White Pumpkin you can also Raw Papaya or Bottle Gourd. You get the same result. If you do not get shallots you can replace it with Onion.
